Fonts & Character Sets ⇒ putting in pictures changes the font of the doc

When I put this in my latex source file

\begin{center}
\caption{The plot of the independence copula}
\includegraphics[scale=0.51]{IC.eps}
\end{center}
\begin{figure}


it changes the font of the whole change and it looks ugly.

How can I make this stop?
