Why there is this space in my text?
I believe that's because you're using \begin{figure}[H] for your figures. You're saying the figure should be inserted right where the code is. And because figures cannot (and should not) be split on two pages, TeX is stretching the vertical glue to fill the page. The usual solution is to specify ...

I see the "not so short introduction to latex" has been updated in 2021... In the meanwhile will investigate your suggested links ...

I'm "coming back" to the TeX (and friends) world after some time (i.e. 15-20 years ago). If I remember correctly, when I last used LaTeX for my master thesis, the situation was more or less like this:
