As for the ??, I was putting the labels of the tables before the caption and somehow this was the problem.

If I want to split the table to two pages, would you recommend using a special package, e.g. longtable?

I am using Greek as the text's main language and English as a second one, so I have to type something like this for the hyphenation to work:

\setotherlanguage{english}
